VICHYSSOISE DE MANZANA CON JAMÓN DE PATO

Ingredientes para 4 pax / Ingredients for 4 people:

• 2 Puerros / 2 leeks
• 2 patatas medianas / 2 medium potatoes
• 2 manzana golden / 2 golden apple
• 1 manzana granny smith / 1 granny smith apple
• 40 gr de jamón de pato / 1,41oz of duck ham
• 100 ml de nata / 3,31fl oz of cream
• 500 ml de agua / 16,91fl oz of water
• C/s de aceite de oliva / olive oil as needed
• C/s de sal / salt as needed

Elaboración / Elaboration:

Pelar las patatas.
Peel the potatoes.

Lavar las patatas y cortar en láminas.
Wash the potatoes and cut into slices.

Poner aceite en un cazo y poner la patata a rehogar.

Put oil in a pan and put potatoes to sauté. 

Salar la patata.
Add salt to potato.

Lavar los puerros.
Wash leeks.

Separar la parte blanca de la verde.
Separate the white part of the green.

Picar la parte blanca del puerro y rehogar con la patata.
Chop the white part of the leek and saute with potato.

Salar el puerro.
Add salt to leek.

Pelar la manzana y extraer el corazón.
Peel the apple and remove the core.

Picar la manzana y añadir al cazo.
Chop the apple and add to saucepan.

Salar y rehogar unos minutos.
Salt and cook a few minutes.

Añadir el agua y cocer.
Add the water and cook.

Una vez cocido todo añadir la nata y cocer 2 minutos.
Once cooked all add the cream and cook for 2 minutes.

Poner en el vaso de la batidora y triturar.
Put in the bowl of a blender and blend.

Colar y enfriar.
Strain and cool.

Reservar en la nevera.
Reserve in the refrigerator.

Coger la manzana granny smith y sacar dos mitades sin el corazón.
Take Granny Smith apple halves and remove without the heart.

Cuadrar las mitades de manzana y cortar en forma de cerillas con la piel como si fuera el fosfora de la cerilla.

Poner las cerillas en agua con hielo y limón y reservar.
Put the matches in water with ice and lemon and reserve.

Coger el jamón de pato y enrollarlo dejando espacio dentro para las cerillas.
Take the duck ham and roll it inside leaving room for matches. 

Colocar 5 rollos de jamón en un plato hondo y rellenar con tres cerillas cada uno.
Place 5 rolls of ham in a bowl and fill with three matches each. 

Servir la vichyssoise en una jarrita.
Serve vichyssoise in a mug.
